Total Time: 95 Minutes, Servings: 10 Servings

Ingredients :
  • 12 Eggs
  • 3/4 cup sun-dried tomatoes
  • 1 cup shredded mozzarella cheese
  • 4 large basil leaves
  • 1 tsp salt
  • 1/2 tsp pepper
  • Spray avocado oil



Instructions :
  • Preheat oven to 400F
  • Spray an oven safe casserole dish with avocado oil to grease. I used a 13″X9 ” pan if you have a different size you may need to increase cook times
  • Crack 12 eggs directly into the greased casserole and whisk together
  • Cut sundried tomatoes into small strips
  • Sprinkle cheese and tomatoes onto the whisked eggs and stir gently
  • Season with salt, pepper and strips of fresh basil
  • Bake in the oven for 30 minutes
  • Allow to cool slightly and then cut into 12 even squares
  • Store in the refrigerator for up to one week
